Pumpkin Chocolate Chip Cookies


Like most people right now, I'm fully embracing fall and getting my pumpkin fix in. Yesterday I hit up Pinterest for some pumpkin sweet recipes. I came across this one and was pretty excited. I hardy ever make cookies but I knew I had to try this one. So I ran to the commissary and picked up the pumpkin and shortening (everything else I always have on hand).

INGREDIENTS

1 cup shortening
1 cup sugar
1 cup pumpkin puree I used it from the can. Just make sure its NOT the pumpkin PIE filling
1 egg
2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
 chocolate chips

INSTRUCTIONS

Cream shortening, sugar, and pumpkin.
Add egg and mix well.
Add sifted dry ingredients and mix.
Mix in desired amount of chocolate chips.
Drop from spoon onto greased cookie sheet.
Bake at 375 for 10-12 minutes.


So, these cookies are amazing! Really moist and soft. I cooked mine for 11 minutes and it was perfect. I thought I made enough for my husband to take to work for the people he works with, but he had almost half of them gone last night. Overall, I highly recommend you try these cookies but prepare for them to not last long. :D
